Recommendations for use:
Corn starch is obtained from the wet milling of corn kernels. It has a strong binding power and constitutes a healthy source of complex carbohydrates. Ingredient with thickening properties ideal to prepare soups, sauces, creams, ice-creams or to make cakes softer and crumblier.
Can substitute the wheat flour to prepare dishes for gluten intolerant people.
It can be used pure, combined with rice flour / potato starch, or mixed with the Farabella Flours and Ready Mixes to improve the crumbliness of the recipe.

Recommendations for use:
Derives from GMO-free corn starch (produced with roll-drying process.) It has a strong binding power and constitutes an important source of complex carbohydrates . The pregelatinized corn starch is also soluble in cold water. Even a small amount allows to give the dough more consistency or form a gelatin. It gives excellent results when used to prepare “wet” recipes such as: soups, sauces, ice-creams, cream desserts, custard tarts, puddings…However, we do not recommend it to cook bread, focaccia or cakes since texture becomes “glassy” when baked in the oven.

The Mono- and diglycerides of fatty acids (E471) are fats obtained from a special processing of palm oil.

It is an emulsifier that stabilizes and homogenizes immiscible substances, to increase the softness and structure of the recipes. Dosage varies from 0,5% to 2%, the organism metabolizes the E471 as any other fat. .

Recommendations for use:
Xanthan Gum (E415) is obtained from the fermentation of sugar secreted by the bacterium Xanthomonas campestris, existing in the natural world. Gluten free flours are difficult to mix, because they do not have “glue” that helps the binding process: the gluten. That is why, when combining gluten free flours, it is not unusual to obtain mixtures crumbled, hard and very difficult to knead, even if the necessary amount of water has been added, according to the recipe.
The Xanthan G um works as an emulsifier, helping the ingredients mix together, it also gives the dough elasticity and viscosity. Only a few amount of this natural powder is necessary, since its role is to give the dough elasticity and easy to knead: usually, 1-2 grams of xanthan gum per 100g of any gluten free flour type is sufficient (a bigger amount will make the dough too hard and useless.) It works well to make bread, pizza or dry pasta and similar recipes since it allows them taking shape. It also helps giving a softer and uniform texture to cakes acting as a “glue”.

Recommendations for use:
Extracted from chicory roots, it is a natural fiber, soluble in water. Very versatile, it can be used to:
• increase the fiber content of a recipe
• reduce the sweet taste (its sweetening power is only 1/10 compared to the sucrose) and it calorie content is half the sucrose
• make recipes with low glycemix index
• stabilize natural ingredients

Useful and very appreciated in the ice cream industry since it gives texture and consistency without en excessive sweet taste. The amount to be used depends on the recipes and the intended results. It is usually not recommended to use more than 5-6%, being a metabolized fiber, it can have a laxative effect, if used in excess.
