Gluten-free Penne pasta with a fresh tomato sauce

Serves 4
350 g of gluten-free penne pasta
400 g of very ripe tomatoes
extra virgin olive oil
2 cloves of garlic
Basil leaves


Parboil the diced tomatoes in boiling water then warm then over a moderate heat in a pan with extra virgin olive oil, crushed garlic and chopped basil leaves. Cook the gluten-free penne pasta in salted water according to the packaging directions.

Once drained, add to the pot with the tomato sauce until fully absorbed. Serve with a drizzle of extra virgin olive oil.
