Gluten-free Cavatelli pasta with courgettes

Serves 4

350 g of gluten-free cavatelli pasta
3 courgettes
1 egg
1 onion
1 clove of garlic
1 small bunch of parsely
extra virgin olive oil
grated parmesan
Salt as required


Chop the garlic and the onion and sauté in the oil, then add the courgettes, sliced into thin discs, and leave to cook over a low heat for around 20 minutes. Towards the end of the cooking process add salt and chopped parsley.

Cook the gluten-free cavatelli pasta according to the package directions, drain and mix together with the prepared condiment adding a whisked egg.

Mix well and serve with a sprinkling with grated parmesan.
