Gluten-free Cavatelli pasta with green olives

Serves 4

350 g of gluten-free cavatelli pasta
1 small onion
1 clove of garlic
4 ripe tomatoes
60 g of capers
150 g of pitted green olives
1 small bunch of parsley
Basil leaves
extra virgin olive oil
Salt as required


Chop the garlic and the onion and sauté in the extra virgin olive oil, then add the capers and allow the flavour to infuse for a few minutes.

Add the chopped tomatoes, salt and cook over a high heat for around 30 minutes. Towards the end of the cooking, add the olives.

In the meantime cook the gluten-free cavatelli pasta according to the packaging directions, drain and mix together with the prepared condiment adding a sprinkling of basil and parsley.
