Gluten-free Lumachine pasta in a creamy green sauce

Serves 4

300 g of gluten-free lumachine pasta
350 g of green beans
1 sprig of mint leaves
300 g of potatoes
1 small onion or leek
1 clove of garlic
Vegetable stock
extra virgin olive oil
grated parmesan cheese


Fry the oil, garlic and finely chopped onion. Chop the green beans and dice the potatoes, parboil the vegetables in boiling water and when ready add them to the oil, onion and garlic mix and allow the flavour to infuse.

Add salt and pepper, pour in the stock, then add the mint leaves, some milk and liquidize.

Pour the cream into a soup pot and add the lumachine pasta once cooked according to the package directions. Garnish with a drizzle of oil and a sprinkling of grated parmesan.
