Gluten-free Garganelli pasta with rocket pesto potatoes

Serves 4

320 g of gluten-free garganelli pasta
300 g of diced potatoes
200 g of rocket
30 g of parmesan cheese
1 clove of garlic
50 g of extra virgin olive oil
1 pinch of chilli powder
20 g of pine nuts
Salt and pepper as required


Instructions

Prepare the rocket pesto: chop up the rocket, washed and dried, add the parmesan cheese and pine nuts, a drizzle of oil and mix together. Set aside.

Peel and dice the potatoes then parboil them in water for 20 minutes. Cook the garganelli pasta in salted water according to package directions, drain and mix in the prepared pesto and diced potatoes.
