Gluten-free Gramigna pasta with avocado

Serves 4

400 g of gluten-free gramigna pasta
1 avocado
100 g of single cream
½ glass of white wine
Salt as required
30 g of butter


Cut the avocado in half, remove the stone and the skin, cut into slices and mash together with the single cream stirring until all the lumps disappear and it becomes a smooth creamy sauce. Empty the sauce into a bowl, add the wine and mix carefully to achieve a smooth texture. Add salt.

Heat up the bowl in a bain marie. Boil the gramigna pasta according to package directions, drain and empty the pasta into the bowl with the sauce and garnish with shavings of butter.

Mix together carefully and serve.
