Gluten-free Conchiglioni pasta with saffron

Serves 6

500 g of gluten-free conchiglioni pasta
100g of cured ham
3 courgettes
50 g of extra virgin olive oil
1 saffron sachet
50 g of grated parmesan cheese
1 sprig of parsley
1 bunch of marjoram
Salt as required


Chop the parsley and mix with the parmesan cheese. Cut the courgettes lengthways and parboil them in boiling water.

Chop the ham and fry in the oil, adding the parboiled courgettes, salt and marjoram. Cook for 15 minutes.

Cook the conchiglioni pasta in water and saffron according to package directions, drain and mix in the sauce and parmesan cheese with parsley.
